celebratory beets

yes, beets. we had my parents and my aunt over for dinner last night to celebrate my father's birthday, and my aunt brought the most delicious appetizer salad. purple + golden beet terrine, layered with thinly spread goat cheese + drained greek yoghurt, drizzled with a balsamic reduction. served with fresh baby greens, and crostini spread with mashed avocado.

seriously, folks, to die for.

as an aside, this is my 300th post -- yippee! more beets, please, let's celebrate!
